It might be even healthier than the actual kefir because it does not contain lactose of casein. These happen to be the most problematic ingredients; luckily this kefir does not contain them in its content.

The preparation of coconut water kefir drink can be obtained on three different ways: using kefir starter culture, using an existing kefir as a starter and by using kefir grains.
The lees expensive way would be by using kefir grains, whether it is with water or milk kefir grains.
- 5 tbs. of water kefir grains
- 7 cups of fresh coconut water
- 1 Ceylon cinnamon stick
In a ½ gallon jar put the coconut water and then add the water kefir grains. Cover the jar with the lid but not too tight and leave it for 48 hours. If you leave it a little bit longer you might cause an explosion because of the fermentation process.
When the liquid changes in lighter color it means it is fermented. As soon as the culturing process is ending the kefir grains will rise up to the top, next you need to do is to remove them.
Use the kefir grains again if you want to prepare another dosage.
