Sweet Potato Muffins


  • 1 organic sweet potato, roasted (1 cup, packed)
  • 2 tablespoon of organic olive oil
  • ¼ cup of organic coconut flour
  • 1 teaspoon of ground ginger
  • ⅛ teaspoon of ground nutmeg
  • 1 tbsp of ground cinnamon
  • ½ cup of pure organic maple syrup
  • ¾ cup of organic canned coconut milk
  • 1 cup of organic brown rice flour
  • ⅛ teaspoon of ground cloves
  • 1 tablespoon baking powder
  • ½ teaspoon pink Himalayan salt


Turn to oven to temperature of 400 F and add some oil in the tray’s holes.

When it gets to the needed temperature, make little holes in the sweet potato and then place them in the pre-heated oven.

Let them cook for about 60 minutes or until they get soft. Take them from the oven when they are done, and leave them to cool down.

When they get cooled, take out the flesh and also add the pulp in a bowl. You can throw away the skin or use it as a snack, because it also contains a lot of vitamins, just like the vegetables.

Pour the milk, olive oil, and maple syrup and then mix them well in order to make them homogenous.

Use another bowl to combine the dry ingredient and after that add them to the dry potato.

Then pour the mixture into the tray and put it in the oven for about 30 minutes.
